    Process

    1

    cook rice

    1. 1.Cook the rinsed short grain rice with water until tender.
    2. 2.Season with rice vinegar, sugar, and salt while warm.
    3. 3.Fold in furikake and shredded nori for extra texture and flavor.

    make tamago strips

    1. 1.Whisk eggs with soy sauce, mirin, and yuzukosho.
    2. 2.Cook in layers to form a thick rectangular omelet.
    3. 3.Slice into long, 1-inch thick strips to run the length of the burrito.
    3

    glaze spam batons

    1. 1.Slice Spam into long batons (french fry style but thicker).
    2. 2.Sear until crispy, then deglaze with soy sauce and sugar until a thick lacquer forms.

    assemble burrito

    1. 1.Lay a warm tortilla flat. Spread a thick, even layer of seasoned rice, leaving a 2-inch border.
    2. 2.Place 2-3 strips of tamago and 3-4 batons of glazed spam in the center.
    3. 3.Add a small dot of extra yuzukosho along the protein line.
    4. 4.Fold in the sides and roll tightly, ensuring the rice seals the edges.

    Plating

    • Slice the burrito diagonally to showcase the colorful layers of tamago, glazed spam, and seasoned rice.
    • Serve with an extra side of yuzukosho mayo for dipping.

    Sensory Checks

    Check

The burrito should feel heavy and tightly packed.

    Color

The interior should show a clear contrast between the dark glazed spam and the bright yellow tamago.

    Check

The taste should be a balance of toasted flour tortilla, sweet-savory glaze, and the sharp citrus kick of yuzukosho.

    Common Errors

    • Burrito falling apart: Ensure the rice is sticky enough to act as a binder and don't overfill the tortilla.
    • Cold center: Ensure the spam and rice are hot when rolling to maintain internal temperature.
    • Soggy tortilla: Drain excess glaze from the spam before placing it on the rice layer.

    Notes

    • Adapted the traditional musubi format into a large-format burrito suitable for food truck service.
    • Increased egg count to ensure the tamago is substantial enough to hold its own against the large tortilla.
    • Substituted nori sheets for shredded nori/furikake inside the burrito to ensure easier biting and better distribution of flavor.
