    Clarifying Stock / Consomme Clarification

    advanced
    clarification

Remove suspended particles from stock by using a protein raft or similar method to produce a clear, refined liquid.

    Prerequisites

    • Stock making
    • Simmering
    • Gentle heat control

    Equipment

    Pot
    Ladle
    Fine strainer or cheesecloth

    Steps

    1

Prepare the clarification mixture and combine it with the cool or cold stock.

The raft ingredients are evenly dispersed before heating.

    5 to 10 minutes

Beginning from a cool state helps the raft form gradually and capture impurities effectively.

    2

Heat slowly while stirring at first, then stop stirring once the raft begins to form.

A coagulated layer rises and starts to collect particles.

    20 to 30 minutes

The raft acts as a filter, but it must remain intact once formed.

    3

Maintain a bare simmer so liquid circulates gently through the raft.

Small clear pockets appear and the stock beneath looks increasingly transparent.

    30 to 45 minutes

Gentle circulation allows continuous clarification without breaking the raft.

    4

Ladle the clarified liquid carefully and strain without disturbing the sediment.

The finished liquid is clear, bright, and free of cloudiness.

    5 to 10 minutes

The final handling stage can undo successful clarification if done roughly.

    Sensory Checkpoints

    • Raft forms and remains coherent
    • Liquid beneath becomes visibly clearer over time
    • Finished consommé appears bright rather than merely strained

    Common Mistakes

    🔴 Stock remains cloudy.

Cause: Raft broken by aggressive heat or stirring.

Prevention: Use gentle heat and stop stirring once the raft forms.

    Recovery: Re-clarify if necessary.

🔴 Clarified liquid loses too much flavor.

Cause: Weak starting stock or overly aggressive clarification ratio.

Prevention: Begin with a strong flavorful stock.

Recovery: Reduce gently or enrich flavor in another controlled way.

    Variations

Classical meat raft clarification: Use lean meat with egg white for fuller raft structure and flavor support.
Egg-white clarification only: Use a simpler raft where appropriate.

    Cultural Context

Consommé clarification is a hallmark of classical refinement and a demonstration of control in stock-based cookery.

    Notes

["Clarification cannot create flavor that was not present in the stock to begin with."]
