Ensure all ingredients are at room temperature — cold ingredients resist emulsification.
Temperature uniformity allows lecithin and other emulsifiers to form stable micelles around fat droplets
Begin with the water-based component (egg yolk, mustard, vinegar) in the bowl.
Starting with the continuous phase (water) makes it easier to disperse oil droplets uniformly
Add oil drop by drop while whisking vigorously, increasing to a thin stream once the emulsion takes hold.
Mixture becomes opaque and visibly thickens — this is the emulsion forming
Slow addition ensures each oil droplet is fully surrounded by emulsifier before more is added
If the emulsion looks stable and thick, you can increase the oil flow to a thin steady stream.

Season and adjust consistency — add a few drops of water or lemon juice to thin, more oil to thicken.
