    Process

    1

    prep and soak ribs

    1. 1.Rinse beef short ribs under cold water to wash off bone dust left by the band saw.
    2. 2.Cover with cold water and soak for 30 minutes to draw out blood.
    3. 3.Drain and pat completely dry.
    2

    make puree

    1. 1.Purée peeled Asian pear, yellow onion, garlic, and fresh ginger with water in a blender until smooth.
    3

    make marinade

    1. 1.Whisk the purée with soy sauce, brown sugar, rice syrup, mirim, toasted sesame oil, and black pepper until the sugar dissolves.
    2. 2.Fold in finely chopped scallions and toasted sesame seeds.
    4

    marinate ribs

    1. 1.Layer the ribs in a container, coating both sides of every slice.
    2. 2.Cover and refrigerate for at least 4 hours, ideally overnight and up to 24 hours.
    3. 3.Turn the stack once during marination if possible.
    5

    grill ribs

    1. 1.Take the ribs out of the refrigerator 20–30 minutes before cooking.
    2. 2.Shake off excess marinade to prevent scallion bits from scorching.
    3. 3.Grill over hot charcoal or a ripping-hot cast-iron griddle for 2–3 minutes per side until caramelized with charred edges.
    6

    rest and serve

    1. 1.Rest the ribs for 2 minutes.
    2. 2.Snip between the bones with kitchen scissors.
    3. 3.Serve immediately with lettuce and perilla leaves, ssamjang, rice, and kimchi.

    Plating

    • Snip the rested ribs between the bones using kitchen scissors.
    • Serve alongside fresh lettuce and perilla leaves, ssamjang, warm rice, and kimchi.

    Sensory Checks

    Check

Marinade should taste balanced sweet-salty with a clean fruit note.

    Color

Ribs should be caramelized with deep mahogany color and charred edges.

    Heat

Watch the heat closely during grilling as sugars shift from mahogany to black very rapidly.

    Common Errors

    • Failing to shake off scallion pieces before grilling, causing them to scorch and turn bitter.
    • Substituting Asian pear with kiwi and marinating longer than 4–6 hours, which breaks down meat proteins excessively and creates a mealy texture.
    • Leaving the grill unattended while cooking, leading to burnt sugars.

    Notes

    • Asian pear's enzymes are gentle, which allows for a 24-hour marinade. If substituting with kiwi, use 2 tbsp purée and cap marinating time at 4–6 hours.
    • Korean-American variation: swap the water for Sprite or Coke for a more pronounced glaze.
    • Marinated ribs freeze well in flat portions for up to a month; thaw in the fridge before grilling.
