    • 150 ml unsweetened coconut cream (richness)
    • 22 g thai red curry paste (aromatic and chile base)
    • 22 g nam prik pao (roasted chile and umami)
    • 25 ml fish sauce (salinity and umami)
    • 17 g palm sugar (balance)
    • 2 g msg (umami)
    • 65 ml fresh lime juice (acidity)
    • 425 g fresh thin egg noodles (starch)
    • 250 g oyster mushrooms — torn into large pieces (vegetable)
    • 250 g cherry tomatoes — halved (acidity and sweetness)
    • 35 g thai basil (fresh aromatic)
    • 30 ml neutral oil (cooking fat)
    • 20 ml chili oil (finishing heat)
    • 1 whole lime — cut into wedges (garnish)

    1. 1.Heat 15 ml neutral oil. Fry shrimp shells and heads for 4–5 minutes until deeply aromatic. Add water plus reserved lemongrass, galangal, lime leaves and shallot. Simmer gently 20 minutes, strain, then reduce to approximately 725 ml.

    1. 1.Heat about 100 ml coconut milk until bubbling. Add red curry paste and cook 2–3 minutes until fragrant. Add nam prik pao and cook 1 minute.

    1. 1.Heat remaining neutral oil in a skillet. Brown oyster mushrooms over high heat until deeply colored but still juicy. Remove.

    Plating

    • Place noodles in the center of each bowl and ladle broth around them.
    • Arrange shrimp, mushrooms and tomatoes visibly on top.
    • Finish with abundant Thai basil and a light drizzle of chili oil.
    • Serve with a fresh lime wedge.
