    • 1 tbsp vegetable oil (marinade oil)
    • 0.125 tsp cayenne pepper — optional (spice)
    • 0.25 tsp black pepper — pinch (seasoning)
    • 2 tsp lemon juice (marinade acid)
    • 1.5 tbsp vegetable oil — for cooking chicken (cooking oil)
    • 2 tsp turmeric (spice)
    • 1 tbsp garam masala (spice)
    • 2 tsp coriander (spice)
    • 1 tsp cumin (spice)
    • 0.125 tsp cardamom powder (spice)
    • 0.125 tsp cayenne pepper (spice)
    • 3 tbsp vegetable oil — (65ml) (sauce base oil)
    • 30 g unsalted butter — or ghee (sauce base fat)
    • 1 onion — finely chopped (brown, white or yellow) (aromatic base)
    • 1 tsp salt (seasoning)
    • 2 tbsp fresh ginger — grated (aromatic)

    • 1 tbsp paprika — not smoked (spice)
    • 1.67 cup tomato passata — (400ml) tomato puree (sauce base)
    • 1.67 cup water — (400ml) (sauce liquid)
    • 100 ml cream — thickened or pure is fine (sauce enrichment)
    • 1 tsp sugar (flavor balancer)
    • 50 g unsalted butter — or ghee (sauce finishing fat)

    1. 1.Combine all marinade ingredients in a bowl.
    2. 2.Add chicken and toss to coat thoroughly.

    1. 1.Heat 1 tablespoon of oil in a non-stick pan over high heat until smoking.
    2. 2.Add half the chicken in a single layer. Sear for 2 minutes until charred.
    3. 3.Turn each piece and sear the other side until charred. The chicken does not need to be cooked through at this stage.
    4. 4.Transfer the seared chicken to a separate bowl.

    make curry sauce

    1. 1.Wipe the skillet clean with paper towels. Reduce heat to medium-high.
    2. 2.Add 3 tablespoons of oil and 30g of butter. Once the butter melts, add the chopped onion, 2 tablespoons of grated ginger, and 1 teaspoon of salt.
    3. 3.Cook, stirring constantly, for 5-7 minutes until the onions are sweet-smelling and the ginger begins to turn golden.
    4. 4.Reduce the heat to medium.
    5. 5.Add the crushed garlic and 1 tablespoon of paprika. Cook for 2 minutes, stirring.
    6. 6.Add the curry sauce spices (turmeric, 1 tablespoon garam masala, 2 teaspoons coriander, 1 teaspoon cumin, 1/8 teaspoon cardamom powder, 1/8 teaspoon cayenne pepper). Cook for another 2 minutes, stirring.
    7. 7.Stir in the tomato passata and 400ml of water.
    8. 8.Bring the mixture to a simmer, then cover the skillet and reduce the heat to low.
    9. 9.Simmer for 15 minutes, stirring occasionally.
    10. 10.Transfer the sauce to a bowl and blend until smooth using an immersion blender.
    11. 11.Return the blended sauce to the skillet.
    12. 12.Add the cream, 1 teaspoon of sugar, and 50g of butter. Stir until the butter is melted.
