Combine chicken, aromatic paste, and all marinade ingredients in a bowl. Mix thoroughly.

Thread 3-4 pieces of marinated chicken onto each skewer.

Grill skewers over charcoal. Baste with coconut milk during grilling until chicken is fully cooked.

In a pot, sauté the ingredients designated for the satti sauce until fragrant.

Add chicken broth and simmer to infuse flavors.

Strain the mixture to remove solids.

Return the liquid to the pot. Stir in patis, coconut milk, and peanut butter.

Gradually add the prepared slurry while stirring to thicken the sauce to desired consistency.

Rinse the rice thoroughly and soak it in water for 20 minutes.

Drain the rice. Combine it in a pan with water, oil, and salt.

Cook, stirring constantly, until the water evaporates and the rice is partially cooked.

Wrap portions of the cooked rice in banana leaves, securing them with string.

Boil the wrapped rice parcels for 20-30 minutes until fully cooked.

In a small bowl, combine potato starch and corn starch with water to form a smooth slurry.

Pour the slurry into the simmering satti sauce, stirring continuously until the sauce thickens.
Plating
Arrange the grilled skewers over a bed of the prepared tamu.
Spoon the satti sauce over the skewers.
Serve immediately.
